You sure can. You've got 30 days from the date of purchase (currently extended until January 8th to accommodate Christmas purchases) to bring it back, no questions asked (obvious questions will be asked if there is say, an axe en-lodged in the unit.)
Will there be 360s with Falcon after the Christmas Holiday?
There sure will. The current game plan involves MS only shipping out systems with the Falcon chip to reduce warranty costs.

Within the first 90 days, it's an over the counter-exchange. Between then and a year, it gets sent to Microsoft regardless of warranty status - simply due to Microsoft's own demands. Between the 1 year mark and until the end of the duration of the service plan, it will be sent out to the FS depot, who will then determine if the unit will be repaired or replaced. If it isn't back in 60 days, they give you a new one on the 61st. If, of course, the problem is the 3 red-rings problem, it will again be sent to Microsoft at their request.
On a side note, the Falcon isn't a motherboard - the new motherboards, named Jasper, hit shelves in Q3 of 2008. Just an FYI

The 735 and 737 definitely are not - there have been 740 CSONs that have been reported Falcons; the only way to know for sure is to buy it, open it, and do the flashlight test on the back grill to see if you can see some copper pipes or not. There's no real way to tell other than that. You can try your luck and ask to open them up in-store, although they may not be that accommodating, especially if it's busy.

If you can get to the Markham location at Highway 7, they had at least two Premium 360s that were lot 741.
As for your TV, the difference between component and HDMI at 1080i is negligible at best.
As for your question, that deal that includes the HDMI cable has been brought up numerous times here. Out in the Atlantic provinces, several stores have refused the price match for several reasons. Some here in Toronto have been successful. Usually, the "argument" is that FS does not carry a comparable cable. Whether or not you get that deal really depends on the managers that are at the store at that point in time. Good luck though.
