Part of the issue comes from the fact that HDTVs are designed to output 720p and higher HD resolution. The Wii only outputs 480i or 480p (can't remember which one), which are standard definition.
A couple of solutions are playing around with your TVs settings so that the image "stretches" to fill the full screen so you lose the bars on the sides (if you haven't done so already).
The other thing you can do is pick up a set of the Wii Component Video Cables which will give you the best possible picture that you can get from the Wii on a HDTV. Make sure that your TV has the proper inputs for the cables first, but I have no doubt in my mind that they are there.
